Publican Quality Bread
...is committed to quality & integrity in all parts of the food chain.
They partner with Spence Farms, led by father & son Marty & Will Travis, who grow all of their delicious wheat & rye using biodynamic farming practices that focus on soil & plant health.
When deciding which wheat to grow, the Publican & Spence Farms teams focused on three qualities in the grain: flavor, baking performance, & agronomics (how well the grain would grow on their farm).
They trialed dozens of varieties & chose Warthog, Turkey Red, & Red Fife.
Marty & Will plant it all in the same field. They save their seed year over year, which has led to the grain over time becoming climatized to their specific farm & soil while also allowing the grain to cross-pollinate & create a field-grown flour blend built to thrive specifically on their farm & for Publican Quality Bread’s bakery.
Taking the letters from each of the grain Warthog, Turkey Red & Red Fife (Warthog, Turkey, Fife), they dubbed it the flour "WTF Flour".
